Mediterranean Lentil Salad

Serves 6 as a side dish

Ingredients: 160 calories per serving 10g fat 6g protein 2g total carbohydrates


1/4 cup olive oil

1/8 cup red wine vinegar

1/2 tsp oregano

1/4 tsp garlic salt

1/4 tsp freshly cracked pepper


1 cup halved yellow grape tomatoes

1/2 cup cucumber, diced

1 yellow bell pepper, diced

1 red bell pepper, diced

1/3 cup parsley, chopped

1/2 cup Trader Joe's reduced fat Feta

1 cup Trader Joe's steamed lentils (or you can cook your own if you have dry lentils in pantry)

1. Combine dressing ingredients in salad dressing shaker.

2. Toss the salad ingredients together, pour dressing on top and serve immediately. Enjoy!
